Dom Denise, a Cistercian monk living in the 18th century, is credited with writing the viticulture and oneology manuscript: “Les vignes et les vins de Bourgogne”. In 1779, this work was translated into Italian and supplemented with brief notes by the author of the Anno Rustico, Marco Lastri (1731-1811). To this day, there remain only a few copies of this Memoir, which has become precious. Later, in 1845, a new Italian version of the same work was published by Giovanni Silvestri and attributed this time to  Domenico Sestini (1750-1832).
The French translation proposed here comes from the first Italian translation of 1779. This document is one of the rare written testimonies on viticultural and oenological practices, at a time when oral transmission was the rule. It is, in its register, the successor of Olivier de Serres’ “Théâtre d’Agriculture”.
