His restaurant, L’O des vignes, is located in Fuissé, in the very south of the appellation. In twenty stages, he follows the wine roads, passing from the Mâconnais to the Côte Chalonnaise, then to that of Beaune, to finish his journey in the Côte de Nuits. Twenty winegrowers, twenty appellations from Fuissé to Marsannay, via Pommard, Vosne-Romanée, Meursault, Ladoix, Mercurey… At each stop, for lunch, Sébastien is welcomed by a winegrower who has prepared the family dish that he likes to taste with his wines. Then, back at Fuissé in his restaurant – and because chefs like challenges – with the same ingredients as those used by the winegrower, he creates a new dish. This book therefore contains 20 family recipes, including boeuf bourguignon, stuffed tomatoes, breaded andouillettes or even roast guinea fowl, prime rib… and 20 chef’s recipes, imaginary, inventive, surprising. This book is also the story of twenty meetings, of twenty portraits of winegrowers who talk about their work, their love of wine. And finally, over the pages, a portrait of contemporary viticulture in Burgundy emerges.
