Can we talk about one or more wine-producing Burgundies? Answering this question requires carrying out a historical analysis of this region. Based on research from the 18th to the 21st century, this work looks back on the constituent developments of this vineyard with many faces. By addressing the question of the stakeholders in the vine and wine, that of regulations, markets and even cultural practices, this collection revisits the apparent opposition between unity and diversity of the wine-growing Burgundy through the prism of its historical construction. Two large parts highlight the originality of the historical geography of Burgundy wines and the plural character of a strong identity construction. Two other parts highlight the number of representations associated with this production outside its borders and that of the challenges it faces in the contemporary world. Thus, this book invites the reader to understand from a new angle, the genesis of the contemporary vineyard(s) of Burgundy by combining historical surveys and current reflections of wine professionals.
